CFD Broccoli Soup

1lb BroccoliBroccoli_pic
1c diced Sweet or Brown Onion (1 small)
3/4c chopped Celery (about 3 stalks)
1 large Garlic clove, thinly sliced (about 1 tbsp)
4c Vegetable Stock
2 generous tbsp of chopped fresh Tarragon or substitute 1 tbsp dried
1 tbsp Olive Oil
½ tsp Salt
¼ tsp Pepper
2 tbsp Marcia’s secret weapon (optional)



  1. Heat oil in a large saucepan over medium-low heat. Add onion and garlic; sauté 3 minutes. Stirring occasionally. Add celery and sauté another 2 minutes. Add broth and 1 tbsp of fresh Tarragon or ½ tbsp of dried. Cover and bring to a boil over high heat. Add Broccoli, cover and simmer on medium low heat for 10 minutes or until Broccoli is fork tender. (Just stab it with a fork!)
  2. Add remaining tbsp of fresh Tarragon or ½ tbsp of dried, Pepper, Salt, and Marcia’s secret weapon, remove from heat and stir well.
  3. Let cool about 5 minutes.
  4. Carefully transfer small batches (about a cup and a half at a time) to blender and puree on low. Be careful, it’s still hot!!       Transfer to a large bowl to cool.
  5. Garnish ideas: shredded Carrots, edible Flowers or a leaf of Tarragon etc.
  6. Yield: 5 cups.
