A NUTRITIONIST, AN ALLERGIST, AND A DIETICIAN WALK INTO A BAR…..

Mandarin orange salad with mixed cabbages in a big bowl.

It turns out that meal preparation is a little more complicated these days. We have better access to health advice and along with that comes extra steps in getting a good meal to the table for everyone. Each family has a specific set of needs and that can get tricky for anyone. As a private chef my goal is to have everyone have something they can enjoy free of any worry. Some have food sensitivities, others are eating for weight gain or loss, others have real allergies that if left ignored can lead to real health complications. Get the food you love, and return to having meals be fun and carefree! Contact me @818.481.0774.

In good health,

Marcia

WHY HIRE A PRIVATE CHEF?

A medley of fresh fruit and vegetables on a cutting board.

Your time is valuable. That’s not new. What is new is that the cost of EVERYTHING has risen dramatically. Now more than ever we are assessing our time and budgets. Hiring a private chef accomplishes many goals.

For starters, a private chef turns your ingredient list into a comprehensive weekly meal plan. Things that may seem like one-off ingredients to you, are easily incorporated into other dishes by us.

Private chefs are budget conscious. Once we know the things our clients like we keep an eye out for special pricing and sales.

A big bonus during these pandemic times is one person handling your food. Delivery services are convenient in a pinch but that’s a lot of hands from the restaurant, to the grocery store, a delivery driver, to you. Private chefs are small businesses and it’s in our interest to keep you and us, healthy.

Hiring a private chef will change your diet in the best possible way. You’ll eat more delicious fresh food and be able to control the amount of salt, sugar, and healthy fats.

Last but not least, a private chef gives you leisure time. Shopping, cooking, cleaning, and even ordering takeout is time consuming, and stressful. Popping a freshly prepared, custom meal into the oven while you relax is priceless.

In good health,

Marcia Whitfield, healthy chef

Auto Immune Protocol Tomato Sauce Recipe

Here’s the NO TOMATOES but is magical like a TOMATO sauce substitute recipe!

In a small crock pot. Combine: 1 large beet (peeled and quartered), 1 sweet onion cut in half, 2 large garlic cloves (roughly chopped), 8 small carrots, 1 c vegetable stock, 1 tsp oregano, 1 tsp thyme, 1/2 tbsp salt, 1/2 tbsp parsley, 1 heaping tbsp of basil, 1 sprig of rosemary (stem removed) and 1 bay leaf. Heat ingredients on high for 3 hours. Once cool, add a splash of red wine vinegar and then blend until smooth! Yield = 3 cups.

Should be freezer safe for up to 3 months but I haven’t tested it!
For reference, my petite crock pot is listed here. I love it and it’s very durable for my single meal prep life! FYI- I am an Amazon affiliate.

Please share this recipe with your friends who struggle with auto immune issues! It’s a real bummer not to be able to eat tomatoes. Also, this is perfect for my sloppy joe and chili recipes that you can find here on Patreon! Hint, hint there’s two secret ingredients to make the sloppy joe’s! Happy cooking! #nightshadefree #AIP #allergies #Everythingdiet #sloppyjoes #chili #plantbased #healthyrecipes

Cool Might Not Get It Done!

A friend and I were texting the other day about our current plans for our health and fitness goals in 2019. I had mentioned I would be joining a new group fitness class in the 2nd week of February. She texted back that she was looking for something cool to join.

Here’s why cool might not be the workout that gets you to your health goals. Cool is trendy. It’s often a fad that fades with time or until the next cool thing comes along. Cool may distract you from the actual work for a period of time, but if you’re in it for the long haul it’s going to have to be more than cool. It’s going to have to work to keep you returning over and over again. Cool is glamorous a lot of the time. I leave my workouts looking pretty unglamorous but feeling accomplished.

I’m not suggesting that you can’t or shouldn’t enjoy your workouts or try new ones. What I am sure of though, is that fitness is a habit. The best habits don’t take a back seat to our whims or when we feel like it. The best habits aren’t often cool but they do serve a higher purpose.

Find something you like or just tolerate and stick with it. The sticking to it, is the thing!

In good health,

Marcia “not cool” Whitfield
